Gluten free diet with whole foods... and gaining??

I was recently diagnosed with an autoimmune disease, and a friend recommended I try going gluten-free. Apparently wheat causes inflammation in many people, even those who do not have celiac disease. I started reading up on it a lot, and found that many of the autoimmune diseases have an inflammatory component. Which leads me to my no-wheat trial.... I stopped eating all gluten on June 10, and I have been sticking to whole foods mostly, going very minimally on processed stuff. I am continuing the same level of activity that I have had. I investigated my new medicine (Mestinon), and it isn't associated with weight gain. I HAVE GAINED 9 POUNDS IN 3 WEEKS!!!! WTF? Have any of you had an initial weight gain when stopping with grains? I was eating a good amount of wheat before, but only 100% whole wheat everything. I have always been careful to eat healthy foods and take care of my body, just to have it somehow work against me. Please let me know if there is a time period of gain before weight loss.... I'm tempted to just add the wheat back!

I just do not feel well and I really think that it's because I cried yesterday on my way to work about my Aunt who is in the hospital. I don't think that we will have her much longer. Just make sure though you keep your gluten free foods, also learn how many calories are in them, and make sure you eat a little bit less than your maitenence. And you're all good.
Also, Are you getting enough water? Have you tried a toxin cleanse?
