It will not be vegan. But it will be low fat/carbs. I've got some great substitute recipes that would be perfect for sides. And a great bread substute from Trade Joe's. The main dish will be easy. Diabetics can eat a lot of fish, chicken and low-fat meat. For desserts I will need help.

Graham Cracker with low fat cheese or maybe some smoked salmon with cream or lox not a lot just a teaspoon full per person, and a selection of unsalted nuts.

Lost - you will definitely NOT be invited to share in the menu- you will be an invited guest. If we used your ideas as indicated above, we would go bankrupt in a day. When I have more time - probably over this weekend, I will introduce everyone to my ideas with regard to a menu. And hopefully others will have ideas, too.

As a major shareholder I don't need any invite from the chief cook and bottle washer thank you!

with new fresh ideas
Chefs ( cooks ) should keep to the kitchen too many of them spoil the broth as we all know.

As a former cook (chef?) for a large restaurant I know how hot the kitchen gets and will gladly stand outside dressed as a carrot. Years of doing that sent me to ICU with a bleeding ulcer. I'll fit right in on Easter weekend!

FYI I've got a great substitute for potato pancakes that tastes just like it. It's cauliflower pancakes. And we will have nova lox and low fat cream cheese with Trader Joe's flatbread crackers.
