I usually start with a baked chicken or deli chicken that still has meat on it and stick it in a large pot with about 3 quarts of water. I boil the carcass about an hour and let it cool, then take the chicken off and cut it in chunks.
Add to the broth in the pot sliced carrots, chopped fresh onion, chopped celery. I use a handful of baby carrots and slice them - a yellow onion (medium) that I chop and about l c chopped celery.
Add spices - about l tsp salt and l/4 to l/2 tsp pepper - I usually throw in a tsp of basil and oregano.
Most stores have dried soup mix (beans, lentils,etc.) and I add about half a package and cook for an hour. If you want, you can add rice or noodle. Then I add the chicken back to the liquid and cook awhile.
