Maybe try doing away with the seasoning packet and add your own.
A teaspoon each of cumin, chili powder, garlic powder.
I think the season packets have some kind of thickening agent, so It may not get as thick, but I like my chili a little soupy.
Add shredded cheddar and sour cream on top of each serving.

MY Chili
Its a small portion recipe. easy to make. I vary it but this is the basics of it.
2 stalks of celery sliced thinly
3 tbls of Olive oil
1 to 2 cloves of garlic minced
pound of chopped meat
1 small can of tomato sauce
4 oz of water
8 oz of medium salsa
1 tbls of cumin
3 Tbls of Chili powder spice
1 or 2-diced jalapenos (can be replaced with hotter peppers if you like it spicier like habaneras or Serranos)
1 16 oz can of small white beans (or any white beans) drained
1 16 oz can of black beans drained
1 to 2 tbls of Cornmeal or Masa (for thickening if needed)
Shredded cheddar or Colby cheese to top right before you eat
Saut the olive oil and the celery on medium-to-medium low heat until celery is a bit translucent. Add the garlic but dont let it burn.
Add Chopped meat, cumin and chili powder. Stir and brown meat. Drain excess fat.
Add the salsa and mix with the chopped meat.
Add tomato sauce and stir
Add diced peppers and stir
Add water and stir
Let ingredients simmer for about 45 min.
Add drained beans and simmer for another 45min to an hour
If its to thin, add 1 tbls to 3 oz of cold water and stir. Add to chili and stir. Let simmer for about an hour. If its still to thin, repeat the corneal step. Let it simmer for another hour. If you thickened it up to much, you can add water and stir. Simmer for about an hour
Put in a bowl, sprinkle with cheese, get a big hard roll or Italian bread, a bottle of beer and enjoy.
Often I will add different beans and veggies to the chili. Like zucchini, carrots or whatever I have around.

SUPER CROCKPOT CHILI
1 1/2 lb cubed stew meat
2 1 lb cans kidney beans
2 medium onions, chopped
1 1/2 tablespoons chili powder
1 8 oz can tomato sauce
1 1/2 teaspoons salt
1 6 oz can tomato paste
1/2 to 1 teaspoons Tabasco sauce
Drain kidney beans, discard liquid. Blend all ingredients in crock pot and cook on low 8-10 hours.
LYC'S CHILI COLORADO
3 lb. stew meat cut in bite size pieces
vegetable oil
salt
pepper
garlic powder
flour
l medium onion, chopped
l 7 oz. can chopped green chilies
3 cubes beef bouillon dissolved in 3 cups hot water
l 28 oz. can red chili sauce
l l/2 tsp. to l tbl. chili powder
l tbl. Kitchen Bouquet
Sprinkle meat with salt, pepper and garlic powder. Dredge meat in flour. Pour oil in a large fry pan or Dutch oven (I usually pour in enough to cover about one-third of the surface) and heat on medium high heat. Place one layer of the stew meat in the pan and brown meat on all sides. Repeat until all meat has been browned.
Place meat in Crockpot and add all other ingredients, mixing to combine. Cook 8 hours on low temperature.
(Note: you can also cook this on the stove, adding other ingredients to meat and cooking on low, stirring mixture every 20 minutes. Be sure to scrape the bottom of the pan to avoid sticking and burning of the mixture. It will be done in approximately three hours
