What we've been drinking when we don't have raw cow's milk (my kids can't tolerate the white stuff from the grocery stores, when milk is pasteurized, lactose is converted to beta-lactose and many people aren't able to digest beta-lactose but can digest lactose if they can get raw milk) is Hemp Milk. This is a bit harder to find, but health food and natural stores like Whole Foods and stores that have "natural" and organic sections carry it. My kids LOVE it and consider the chocolate and vanilla flavors a real treat.

On the coffee, the latest recommendations are to wait at least an hour after taking the synthroid before that morning cup of coffee.
It's important to remember that ideally synthroid should be taken on an empty stomach, 1 hour prior or 2 hours after eating and ideally with no other medications or supplements and only plain water. If you can't do this, at least be consistent in how you take it so your levels and labs will be consistent (and get the labs at the same time as well). Changes in diet and timing may throw off your lab results and you may end up under or over medicated.

PS Almond milk and rice milk can be found in the health food aisles at most grocery stores. Almond milk is a bit sweet, creamy and nutty; rice milk is generally a bit bland and thin and very low in protein. I've never heard of arsenic is rice milk; if there is such a thing I'd look for an organic rice milk source; Rice Dream is a good brand. Good luck!
Google digestive advantage and run to the local pharmacy that has it. That is the best answer.
Soy milk goes bad frequently and I wasn't as much of a fan of it.
I hadn't heard any negatives about rice milk and drink it very happily.
Took me a while to get the taste for it.
The biggest key is that you are consistent. If soy does effect things, but every time you test, and most days, you are doing the same thing, then your dosing could potentially be leveled around that lifestyle.
I'm happier on rice milk.

Moderation is key. I don't drink a gallon of rice milk a day. Don't overdo it.

It wouldn't be advisable to avoid all goitrogenic foods, because they have other healthful properties too. But I think the key is, if you have thyroid issues, to watch that you're not over-consuming these foods. It's easy to over-consume soy, because it's in so many products.
