Ganja, you can substitute goat cheese. The mascarpone is sweeter
and much cheaper. It comes in a small plastic tub. The goat cheese
you have to slice off. Either on is good. The Thai sweet chili
sauce is the same thing they use for spring rolls.

Captain? It's a chicken dish with many spices
and veggies.
I never heard of that dish Ozzie, I googled it, sounds fancy. I think of southern food as BBQ, fried okra & biscuits & veggies & sweet tea & corn bread. Cooking's a lot of work sometimes. Next on my list of recipes I'll probably never make is White Fence Farm fritters. Have you ever been there Oz?

It's right off I-55. I can't remember the fritters though.
Bobby Flay had a Country Captain throw down with the Lee Brothers
from Charleston S.C. That was the first time I've ever heard of
it. Sounds interesting.

Ozzie, there was a carry-out WFF down the street, and we used to get these fritters. I don't know if this recipe is any good... found it online.
White Fence Farm's Corn Fritters
Ingredients
vegetable oil for deep frying
2 large eggs, beaten
1/4 tsp salt
1/8 tsp white pepper
1 can(s) (16 oz) cream style corn
2 tsp baking powder
1 tsp brown sugar
1 1/2 c all purpose flour
confectioners sugar for dusting
Directions
1 Preheat the oil to 350 degrees F in a deep fryer or a deep electric skillet. There should be at least 2 inches of oil.
In a large bowl, beat the eggs, salt and pepper together. Add the corn and blend thoroughly. Add the baking powder and flour, but do not over stir; some of the flour should be visible.
Drop the batter by tablespoons into the hot oil and fry for 2-3 minutes on each side, or until a light brown. Drain on paper towels and sprinkle immediately with sifted confectioner’s sugar.
Form meat into a golf ball size ball, but try to do it quickly without handling it to much. Heat cast iron skillet to med high, when hot put the meat on the pan for 30 seconds, smash and cook for 30 seconds more. Flip, add cheese, cover and cook for 1 minute. Serve on lightly warmed bun. Fantastic! Oh, when you smash burger quickly season with salt and pepper and when you flip lightly season it. ( i usually don't, since I like the flavor of the meat.)
You don't want to handle the meat much, or the fat will stick to your hands. You want the fat to stay in the meat, as the searing will caramelize the fat, giving the burger a juicy yummy taste.

Corn fritters look great. You may not make them because they are fried? They are easy, and if you make a big batch, you can freeze and fry later.
