For all you cooks out there!!! My Mom & Grandmother taught me to cook at a young age.
There is nothing more satisfying to me than cooking a great meal for my family & friends.
I can cook any type of cuisine. So lets share some GOOD EATS!!!!
blanche1, there are some very good bottled hot wing sauces out there. Open the bottle and taste.
If it's to hot for you, you can either cut it with some melted butter or water. If you fry your wings fry
at 350 for 12-14 min.let the grease drain off and put them in a bowl,& add your wing sauce and coat.
If your baking them, season em' with salt & pepper and bake at 400 till golden brown. I'd say about
45min. Then coat with the wing sauce!!! Hope this helps!!!
Ozz I never thought about cutting the hot sauce with butter or water. Since I love butter I'll go that route. One of my favorites is Louisiana Hot Sauce but its always to hot for my taste. THANX!
Hubby's got to have a cream pie for desert that will help cool down the heat to....LOL
ranger, I have a 11lb. pork shoulder rubbed with mustard & a 7 spice rub that I make marinating now.
Also a pot of black bean Mexican chili simmering for the commercials!!! and Super Bowl!!! LOL.
I'd be big as a house if I lived with you Ozzie. I love food. I don't cook as much as I used to.
Recently discovered roasting vegetables. mmmmmmmmm. beets, onions, swt potatoes, turnips, brussels sprouts.
Not my recipe, but it's the one I always use...It's super good!
Ingredients
1 pound dried red beans, rinsed and sorted over
3 tablespoons bacon grease
1/4 cup chopped tasso, or chopped ham
1 1/2 cups chopped yellow onions
3/4 cup chopped celery
3/4 cup chopped green bell peppers
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Pinch cayenne
3 bay leaves
2 tablespoons chopped fresh parsley
2 teaspoons fresh thyme
1/2 pound smoked sausage, split in half lengthwise and cut into 1-inch pieces
1 pound smoked ham hocks
3 tablespoons chopped garlic
10 cups chicken stock, or water
4 cups cooked white rice
1/4 cup chopped green onions, garnish
Directions
Place the beans in a large bowl or pot and cover with water by 2 inches. Let soak for 8 hours or overnight. Drain and set aside.
In a large pot, heat the bacon grease over medium-high heat. Add the tasso and cook, stirring, for 1 minute. Add the onions, celery and bell peppers to the grease in the pot. Season with the salt, pepper, and cayenne, and cook, stirring, until the vegetables are soft, about 4 minutes. Add the bay leaves, parsley, thyme, sausage, and ham hocks, and cook, stirring, to brown the sausage and ham hocks, about 4 minutes. Add the garlic and cook for 1 minute. Add the beans and stock or water, stir well, and bring to a boil. Reduce the heat to medium-low and simmer, uncovered, stirring occasionally, until the beans are tender and starting to thicken, about 2 hours. (Should the beans become too thick and dry, add more water, about 1/4 cup at a time.)
Remove from the heat and with the back of a heavy spoon, mash about 1/4 of the beans against the side of the pot. Continue to cook until the beans are tender and creamy, 15 to 20 minutes. Remove from the heat and remove the bay leaves.
How's everyone's Super Bowl munch coming along? It smells so good in my TX asylum!!! LOL.
ranger's pork butt recipe is delicious. I snatched a little sample. It's still roasting slowly. I also
made some black bean Mexican chili. And Au gratin potatoes. A little power nap now before
the game!!!!
Ours was delish! I will say that the lemon butter and sauce was a great idea!!! I nearly wanted to suck the sauce down threw a star, it was so tangy spicy yummy!
Bread 'n' Butter pickles? I love them. Well I like pickles in general. But the Bread 'n' Butter ones,
after you have ate the last one, don't throw away the juice. Wash a cucumber & slice with the
skin on about 1/8 to 1/4" thick. Then put the slices back in the store bought juice. Let them sit
for 48 hours & you have more pickles!!
Note--I turn the jar upside down a couple times a day and give a good shake.
Note--make sure the lid is on good & tight!!! LOL.
