I go to a local place near me that juices veggies and I get carrot and apple juice. I drink Ensure a lot, too, because that's fortified, and I will get smoothies with strawberries and mangos in them because my stomach can handle those.
Also, I've been making veggie-based soups. You can then throw in what you can tolerate that way and plus, if you cook it long enough, the veggies get soft.
I make a yummy pumpkin soup with canned pumpkin, chicken broth and white beans. I like spicy stuff so I add some Indian spices. I also just made a pot of veggie soup. I just use what I like and what I have on hand. For this pot of veggie soup, I used white beans, onion, celery, garlic, veggie broth, carrots and an Anaheim pepper and added red curry paste. I know a lot of people can't tolerate the spice when they're in a flare, but for me I just go for it. The heat makes me feel good, I swear!
I am becoming a pill popper now. I am just doing the iron, folic acid, and vitamin C now, but I may add a basic vitamin. I take that extra boost of Vitamin C in an effort to help out my immune system.
It's a struggle to maintain isn't it?
