If I was you I would continue seeing him for a while, and if no real spark ever starts to ignite then you will know this may only be a friendship for interest's sake and nothing more. Not every encounter with a man has to develop into a longterm or permanent relationship.
You probably find he is intrigued by you not falling all over him at the drop of a hat. Being a smouldering Italian he is probably more accustomed to that happening, so your cool confidence is no doubt a new kind of challenge to him.
Take it easy, have fun and see if it goes anywhere for you.
Don't rush it. Enjoy your time with him, and maybe things develop, maybe they don't. Just be you.
Of the three important relationships I've had, one was a desire to be married, one was a chess match, and the other was two long time friends finding they had bigger places for each other in their hearts. None of which was a spark for me, they were all pretty much slow burns. I kinda like that better though.
On the other hand, chemistry can develop, too. Or maybe he's a great guy, but not THE guy. But you'd have to get to know him first before you really find out if you're compatible.
