Tonight I am going to attempt to make enchiladas. I was inspired by the following picture.

I make enchiladas sometimes....good stuff. Tonight I'm baking tilapia and roasting some asparagus with olive oil and garlic salt. I feel the need for something healthy, after many days of careless eating. Probably will make a small salad, too..

I just picked up some fresh organic chicken breasts, fresh tarragon, crimini mushrooms and cream. I'll serve the chicken on a bed of egg noodles with a sherry, cream tarragon sauce. I could use a date if someone wants to come for dinner.

After being away all week - my kids are expecting a meal, lol. They've had to fend for themselves.

Tonight it's baked potatoes with sour cream, porkchops with apple sauce and brocoli

I cooked all through the holidays, today is leftovers from yesterday.

My last years signature dish, was garlic cesear salad with baked chicken. Emeril recipe. Roast the garlic, and make the dressing....YUMMY!

OMG Bernie... that sounds insanely delicious (minus the shrooms - I don't do fungus). If I were closer, you'd have a dinner date.

I'm doing spaghetti with meat sauce - the easy way. I've become so lazy lately that I'm not even making my own sauce. Tonight, it's the stuff in the jar with ground beef added to it, but it's dinner and I'll have leftovers for tomorrow. :-)
