I love burgers but its best to get it ground from one cut at the butcher. Reg ground beef from a bunch of different cows aint good. That said even ground from one cut I will not eat beef tartar. Raw gound beef topped with a raw egg : /

there was a period of 4 years I didn't eat beef...but then my mom tempted me with one of my favorite meals....lol...so, yeah...that went down the drain...lol
