for years I struggled with the knowledge that I couldn't do a lot by myself due to physical limitations (not bipolar). I really found out during that period how many people truly loved and cared and wanted to help me. I know my husband and my children often needed a break. Now that I am physically better my spouse and kids have gotten a well deserved break.
My best advice to you would be to look around for anyone and everyone that might be a source of help for you. Friends, other relatives for example. I had to stop telling others no I didn't need help and start saying yeah sure what do you want to do?
Not to dive into your religious beleifs, but the people from my church have always been a huge help for my family. Wether it was making meals for the family or taking the kids to do something fun for awhile. This would always give the kids a chance to have a life that was outside the stress and chaos that my home seemed to be in. In other words, let others help, ask others to help. this will give your mother a break in itself. Make sure you are doing what you can, but also show your mother your gratitude for everything she is doing. Thank-you goes a very long way. :)

You DESERVE the help you are getting. You would not feel guilty if you didn't. Those who take, never feel guilty.
Offer to make up a schedule of when she can help and when you will take care of things come hell or high water.
I know that if I feel I need to be doing something, I don't rest when someone else is doing it. Which basically negates the purpose of someone helping me.
Give yourself some sanity and schedule time off for your mom. She will appreciate the effort and you will feel better as well.
Just a ps, I am NOT talking about a BIG break, just a schedule you can both plan "me" time around.
