Eventually all dementia patients become an aspiration risk; even to the point of their own saliva. I would definitely talk to the caregivers to ensure that they're giving her softer foods or liquid foods if that helps. She should also be in a full sitting position when eating or drinking but even with this some patients are just more prone to choking or food getting into the lungs.
It is very sad to watch our loved ones go through this.
