I’m thinking one step at a time. I’ll keep it to one day a week. This was traumatic for him.. I do have a harness and leash for him but he hates it. I have to tell you, and I should tell my family as well, that he is just not that type of cat. He’s got a really strong personality and when he protests he means it. I’ll see what once a week does but I’m cautiously skeptical.
what about putting his food bowl inside the carrier on the days you don't take him out? make him go into the carrier if he wants to eat?

i crate train my dogs. the newest one --not quite a year old-- is going to do her first ever road trip with us. with all the road dogs i've trained so far, that crate opens the world for them. at home, the dogs feel a bit punished when i tell them to, "go to bed" and shut the crate door. on the road, that becomes their safe space in all the strange places. i make sure the bedding is a bit dirty so that it smells like home.
a treat in the bag is a good thought. I don't give him treats because he's already chunky.
I feed him one handful of food a day- but he is a CHUNK! more cat to love :) hehe
no treats needed. if you leave the door open so he can come and go as he likes and leave his daily weight watcher grub in there, it might start feeling like home in no time. might. . . i haven't forgotten that i am a far better dog trainer than cat lover.
Here's the thing, you are able to introduce it as a 'friend' by putting it out and leaving the door open.
I would take him out for a short walk every day. He doesn't like it because it's 'different' and he does not see it as a 'friend'.
That's the best way I can describe it. It took me several tries to get Gir comfortable with walking after a couple of disaster ones. He now loves going out in the stroller with short walks on the leash.

he was super happy to be home! He didn't like it - but I think once a week out of the house will be good for him!

Yeah, good ideas but he seriously doesn’t like this bag or any bag. Grocery bags on the floor he avoids. He’s very specific!
