
Saturday we had a vegetarian dinner that turned out really good. Even my mom didn't complain (shocking!)
I made my classic Hungarian mushroom soup using Portobellos and some other mushrooms I got on my epic grocery trip last Wednesday. I live 2.5 hrs away from an international market. It's huge and most stuff is super cheap. I stocked up on produce and things I can't get at home, like Italian flour, middle East couscous, mushrooms, premade pirogues, shellfish, fancy cheeses, and Nordic candies.
Anyway, I made my soup with mushrooms, onions, garlic, various other spices, couscous, celery, chicken stock, and heavy cream. It was super rich and earthy. I served it with baked potato halves stuffed with Spanish briard cheese and shredded cheddar, Montreal steak seasoning, and green onions. I also made stuffed portobello mushrooms. I liberally douse them with Worcestershire sauce and red wine, then sprinkle with Lawry's seasoning salt. I stuffed them with a softer cheese I forgot the name of, and more of the cheddar and steak seasoning. Everything turned out great.
Yesterday we cleaned and reorganized the freezers. It was easy with his help. Picked corn. Cut it into small cobbs and froze. Also prepped and froze peppers, eggplant, and some other things for use later.
Made a miso soup with little beech mushrooms for lunch with grilled cheese. Having leftover soup with salad today for lunch at work.
After that we got cleaned up and went to our local apple orchard/store. Got over 5 lbs of Jonathan apples which are hard to find, as well as their huge wonderful golden delicious apples! Will prep and freeze what I can here soon, then go back and get more. I also got some purple plums for a pie here soon, some frozen persimmon pulp, and various jars of canned jams, butters, relish, and preserves, since our garden was poopy this year and didn't do any canning :/
I really want to spend a day making pie crusts and putting them in the freezer. We used to do that at a restaurant I used to work at. My mom doesn't want to tho. We will see.
I prepped some parsnips, golden beets, and zuchinni in the oven the other day, so tonight I hope to have that, cooked greens, and maybe some beef and noodles? Idk yet.

I know this is stupid, but after not being able to find a job after graduation for almost two years, I ended up just taking an online teaching job because I couldn't find anything in my field.
