
I grabbed alot of frozen chicken and canned tuna before all this quarantine stuff started, so today I made out some meal ideas.
Tonight's dinner turned out amazing! It was inspired by poblano chicken I had at a restaurant awhile ago.
I marinated some chicken breasts in garlic marinade. I think it was a knock off of olive gardens salad dressing. I used half a bottle of that, half a can of Rotel, some meat tenderizer, and some herbs and avocado oil. I cooked the chicken breasts in the marinade, in the electric skillet, with the lid on, then I topped them off with some Neufchatel cream cheese.
For sides, I boiled a can of great northern beans with chicken broth, lemon juice, garlic powder, herbs, salt and pepper, and some olive oil, then I mashed it with a hand masher, added water, then added just a little of the Idaho instant mashed potatoes. So basically a high protein mashed potato. And I also made some sweet corn I had frozen from last year with butter and Montreal steak seasoning.

So mad at Xfinity! They're trying to charge me $115 per month for the same service I had been paying $50 the last four years. I took the equipment to UPS for shipping and cancelled my subscription today! Next door was a cookie shop called Crumbl. I had heard of it before but never went in until today. I don't need one more sugar fix, but maybe it will help with my sad) grieving heart....$15...

I know this is stupid, but after not being able to find a job after graduation for almost two years, I ended up just taking an online teaching job because I couldn't find anything in my field. I was trying to get out of teaching and I feel so devastated. I felt this crushing feeling when I signed the paperwork and when I was in the meetings. but you made me think...I have some tuna and I have plenty of mac and cheese boxes....so making mac and cheese then adding the tuna and into oven with some added bread crumbs is one thing long ago room mate taught me....I love it....might do that tonight....just had a ham and cheese sammy to start things off....took my insulin already so I should add more to it...I could do a can of beef hash from the dollar store....that is good...beef and potato....
I might do the mac and cheese though....not sure...easy is what I am thinking and that is the beef hash open can and heat....but I do not know....
