I find I tend to be disappointed in most complicated recipes I try.
I really love to grill large portabella mushrooms with a little balsamic vinegar and seasoned salt and serve in a bun with all the usual burger toppings - lettuce onion etc - it's also really good with grilled red bell peppers. I also like to make a fresh veggie sandwich - tomato cucumber red onion green pepper spinach - I toast the bun, use a little veganaise and garlic salt.
For breakfast, I like old fashioned oatmeal with two tbsps tahini, one tbsp honey, and sprinkle cinnamon.
I was a chef in college, so I am a pretty good cook. I posted some of my favorite recipes on my blog http://netsperience.org/category/recipe/recipes
I am growing some veggies, a challenge since I live in an apartment. Herbs grow well on windowsills.
vegan versions are also good.
