Cherry sent me a website that had this recipe on it and I made it two nights ago. It's really good and the kids loved it!
1-1/2 c. penne pasta, uncooked
1 pkg (9oz) fresh spinach
1 lb boneless skinless chicken breats, cut into bite size pieces
1 tsp. dried basil
1 can (14-1/2 oz) diced tomatoes, drained
1 jar (14 oz) spaghetti sauce . I used Prego
2 oz (1/4 of an 8 oz pkg.) Philadelphia Neufchatel cheese, cubed (this is usually beside the cream cheese)
1 c. shredded mozzarella cheese,divided
3 Tbs. grated parmesan cheese
Heat oven to 375. Cook pasta in lg. saucepan as directed on package, omitting salt and adding spinach to the boiling water for the last min.
Meanwhile, cook and stir chicken and basil in lag. nonstick skillet sprayed with cooking spray on med.-high heat 3 min. Stir in tomatoes and spaghettie sauce; bring to boil. Simmer on low heat 3 min. or until chicken is done, stirring occasionally. Stir in Neufchatel.
Drain pasta mixture; return to pan. stir in chicken mixture and 1/2 c. mozzarella; pour into 2 qt. casserole sprayed with cooking spray.
Bake 20 min. or utnil heated through; top with remaining cheeses. Bake 3 min. or until mozzarella is melted.
I'm making this again tonight and leaving out the chicken because I want the pasta as a side dish:) Enjoy

Dix this sounds really good as main dish or side dish. Hearty and filling for fall weather. I will try this for the grandchildren as they really like pasta. May leave out the spinach and add broccoli instead since they like that veg.

89FToday it is again another hot day but cooler then yesterday. Since this is August it is to be expected in my neck of the woods. All the grass is yellow and flowers are starting to go to seed. I need to water my garden but this time of the year I'm so over it, which is weird because all my plants have their fruit or veggies.Sandra, this time of year reminds me of your Dad and his toms.
