Very Buttery Delicious Caramel Popcorn
1 cup butter
1 cup granulated sugar
2 Tbs. water
1 Tbs. light corn syrup
1 tsp. vanilla
6 cups of freshly popped popcorn
Melt butter over low heat, add sugar and bring to boil, add water and corn syrup. Cook to 270 on candy thermometer stirring occasionally. Remove from heat and stir in vanilla. Quickly spread out on a buttered cookie sheet or waxed paper. Cool till firm then break apart. Store in air tight container.

Since I have everyone craving peanut butter fudge, I'll share my embarrassingly easy recipe.
Boil 1/2 cup milk and 2 cups sugar for 3 minutes.
Stir in 1 cup peanut butter (it's good with chunky)
Pour into a waxed paper lined pan and let it cool!
Told you it was easy, but it's so good.
For the meringue (you can cheat and buy a meringue!)
3 large egg whites
6oz caster sugar
1 level table spoon of cornflour
1 oz of flaked almonds (or nuts of your choice)
For the topping
284ml carton of double cream (or low fat whipping cream works too)
300gram jar of lemon curd
Set the oven to cool, gas mark 2 or 150c /300f
Whisk egg whites until stiff
add 1 tbs of sugar whisk again
keep adding sugar 1 tbs at a time to make a smooth stiff and glossy meringue
whisk in the sifted corn flour
spoon the mixture into a round, about 10 inches onto a lined baking sheet, sprinkle the flaked almonds around the edge
Bake for 1 hour in the center of the oven or until the meringue dries out and feels hollow.
For the topping
Whisk the cream until it forms peaks and fold in the lemon curd
spread the mixture over the cooled meringue leaving the almonds around the edge uncovered.
Decorate with the raspberries,
Drizzle with 1-2 oz of melted dark cooking chocolate (optional)
dust with icing sugar before serving.
4 oz cornflour
4 oz icing sugar
8 oz plain flour
8 oz butter
Mix it all together, roll it out and cut out your shapes, bake for 20 mins
