Problems switching to cow's milk?

Here's the scenerio:
I work full time and DD, who just turned 1, is in daycare. She had been bottle fed expressed breastmilk until recently. I nurse in the morning and night only. At 11 months, I had daycare starting transitioning into cow's milk. We started at 1 part CM and 3 parts BM and eventually transitioned to 100% on CM. A few weeks ago, when she was on the 3 parts CM and 1 part BM mix, is when the probelms seemed to start. She would have on and off diarrhea and got this terrible diaper rash that lasted more than a week. I eventually took her out of her cloth diapers and into disposables and that seemed to help a bit. Her poop was intermittent between soft and diarrhea but the rash seemed to flare up whenever she had diarrhea, even in the disposables. Now, a week after she started 100% CM, she developed a rash on her back. We went to her 12 month check up and doctor said most babies have these type of issues adjusting to cow's milk and advised me to give it a few weeks to let her body adjust. He seemed to think the rash on her back wsa due to heat. Now this past weekend, the skin rash spread to her front, legs, arms and neck. The rash is raised and is red and blotchy. She also had diarrhea all weekend. She has not had a fever and does not even seem bothered by it. In fact, she's been in good spirits. Also, she eats cottage cheese, yogurt and cheese with no problems. I called the doctor and they advised me to take her comletely off CM today and if the rash goes away immediately, it's most likely because of the CM. If not, it could be viral. My gut is telling me it's the milk and that I should probably just go straight to soy milk. If I could predict this, my guess is that her body is still not ready for cow's milk. My pediatrician is just acting like this is no big deal and really doesn't want me to rush into soy milk. But in the meantime, I'm pulling my hair out trying to figure out what this is.
Has anyone else experienced this? And what's your thoughts on Soy milk? Any suggestions as to what brand I should buy? I've also heard others suggest goat's milk or almond milk? How do I know which kind to substitute with?

My 6mo twin DD's are EBF and just started rice cereal on the first. Everything has been going fine except this morning one of them had a diaper rash (lots of redness around her anus). I read this as one of the signs of an allergy. BUT I did just buy a different brand diaper yesterday (which they have used randomly before w/no issues). Do you think its the cereal or the diaper? Can I also say that although anella is still BF when I spoke to my ped and told her anella didn't like cm my ped said as long as she's getting calcium/D in some form (ie yogurt, cheese...) there is no need for "milk." I honestly will never introduce cm or goat as I don't personally think it's necessary in their diet
Sounds like a Milk Allergy... if you aren't comfortable with your ped's diagnosis, just go to another ped for a second opinion. Ask them to preform tests to ensure it's not a stomach bug, etc. (this is usually done by taking BM samples). Some people make decisions on assumptions, but I'd say it doesn't hurt to be in the know and make sure you are acting on the correct treatment.
My daughter is lactose intolerant, meaning her body can't breakdown the lactose (sugars) founds in CM. She did experience the diaper rash and diarrhea but not that rash you described (which sounds awful, poor thing).

I personally started weaning DD to Lactose Free milk, but in your case if it's a protein/milk allergy that wont be enough and almond milk might be the way to go.
Just continue doing your research and ask your ped to get your DD tested in order for you to know exactly how to go about this.
