One thing that gets me every time is really high fiber foods like popcorn or lettuce....when I used to only react to fatty foods. I'm sure you have already tried this but do you ever drink Ensure or Ensure clear, Boost, Carnation instant breakfast? those might also help put weight on....when I eat icecream unfortunately it runs right through me and I probably don't absorb the calories from it very well...so in that way, you do want to try and get a lot of your calories from food that is somewhat easy on your pancreas so you have no trouble actually breaking it down. I find greek yogurt to be pretty awesome as well (mre protein than icecream) , and you can get that in fat free or full fat varieties...
