Its going to be difficult for you if you aren't going to be resting and your husband isn't too supportive, to be honest I wouldn't go.
If you want to go with your husband, go. But let him know ahead of time that you have certain boundaries physically and he needs to respect that. If he can't, then I wouldn't go. You need to take care of yourself! And, if he isn't supportive emotionally or physically in general, there may be bigger issues to deal with. Good Luck!
Take care

As far as traveling goes it scares me to go very far. My last vacation was more like a weekend trip only 3 hours away because I was so scared of getting sick away from home.
I think the idea of having extra meds and your medical info from the doctor is a great idea...really even for trips to the ER at home when needed to help bypass the whole hypochondriac/drug seeker diagnosis...especially if you blood levels don't change any more.
Good luck with what ever you decide to do! ((hugs)))
As for the vacation I'm recently facing a very similar situation. My husband has always wanted to go on a tropical vacation with me, and he has been working his butt off for his big promotion the past two years (which he got) so, he has definitely earned it!! Well, then I got scheduled for my Total Pancreatectomy, and he is just terrified something is going to happen. So he put his foot down and decided we are going on vacation. It was actually very sweet, he wants to make sure we "have that memory to get us through."
Well I'm TERRIFIED! I insisted on all inclusive and somwhere with a beach, and I'm lucky he tries very hard to be understanding and accomodating, so when I told him I didn't know if I would be able to leave the resort he said that would be fine. I know it will be a different story once we are there and people are suggesting places to go and restaurants to eat at and I can't. But, I'm hoping and praying he'll be able to cope when the time comes.
Things I'm doing to make sure I can handle vacation: I'm packing food for the plane, I'm going to make fat free pancreas friendly snacks and a small meal to bring along, I'm going to bring along an empty water bottle to fill at the gate for taking my meds. We did get travel insurance. I'm packing a copy of my medical records (getting them on disk is a great idea!!-- love it!) Making sure I bring plenty of medicine, my heating pad, etc. etc. Still pretty nervous.. but, I feel like I need to do this for my husband.
I have to admit in your shoes I feel like I might back out and not do it. I'm so nervous about travelling WITH a supportive husband, but going with someone who doesn't understand just sounds like a nightmare. Prayers to you in this stressful situation!!
