Most of the physical aspects of college are related to traveling to and from classrooms and school. So if you find a small college or one where your classes are close together that might help. Also using a handicap scooter and picking handicap facilities could help.
I think I would try doing some online coursework and see if that route would be workable. A lot depends on what coursework you are taking, but some of the studies can be done quite well online. My niece just finished a master's and only had to go to the school once per month or so -- rest of it through her computer. Of course that assumes what you are interested in is the coursework rather than the social aspects of school.
And of course, you could try a class or two at a regular college to try it out part time.
