Might sound harsh but she' obviously not invested in you as you pointed out.
I know it will be hard because you really like her but you have to face reality. Do what is best for you, of course you could wait till she calls it quits and that might hurt worse, either way I don't see the relationship working out - do you?

I, personally, would sit down with your girlfriend first and explain that you feel she is being unreasonable and that this could be a deal breaker in the relationship. You want the REAL REASON(S) why she won't introduce you to her parents. Is it race, is it education, is it your job, is it where you both are living, is it that her parents are racist jerks or just plain jerks, is there mental illness, Parkinsons or Multiple Sclerosis in her family and she is afraid to let you know, is it both of your future plans, is it that her parents want her graduated from college before she gets into any serious relationship---there could be any number of reasons, but you deserve an explanation.
If she won't talk to you about it, or won't give you an actual explanation, then it's time to break up and you move on. You deserve a relationship where everything is transparent.
you sound like a very sweet person.. if she is not treating you well then it's her loss, you should find someone who loves you and treats you as you deserve :)
And then you have to stick with it in case she doesn't respond, and that is your sign that the relationship is done. You walk away, don't text, call or go see her, and don't answer her texts or calls and don't answer your door if she shows up. She gets this one last chance and that's final. You have to set boundaries in your relationships or you walked all over. You've been kind, but walked all over and it's time to put an end to all this. Best of luck and many, many hugs.

Like the other have recommended, I think you should move on and leave this girl behind. Find someone who is more appreciatie of what you do fer her. This current girlfriends sounds like she is only capable of brining life-long resentment.
