I know it's hard to 180 someone, but I did it and I have four kids, one of which has serious medical issues. If I could do it, you could do it.

The only advice I can offer is pretty much the same as others have already said, which is to do the 180. You may be stuck with the situation as it is at the moment, but perhaps you can start living for yourself as opposed to the marriage.
Concentrate on yourself and your precious children right now. Hang in there and just take it one day at a time.

If this woman needs to have some 'time' to figure it all out, she is pretty far gone. Time? I would walk her shit to the curb, change the locks, and tell her to take all the time they wanted.

They really need to take time? Throw in how you created a family with them, and a home with them, and a day in and day out with them, and they need to weigh THAT against some cheap thrill? If you are with someone who does not understand this, her stuff on the curb may clear the fog that has settled on her damned mind.
Who cares what she wants? You didn't want THIS, right? She brings this whole issue into your family home, sets it on the table as if it's wonderful for her, when it's actually just a whole lot of shit, and now asks for TIME to let her figure out what she wants?
Who says you have to give it to her? You don't. She brought it. You have the right to handle this as YOU see fit.
Curb. Her stuff. Locks changed. Parenting plan in place. SeeeeYaaaa...
Her wanting this? It's a big 'no win' for everyone. The toughest of situations. Wow, does she suck.
Personally, her wanting to 'take time,' I think, is her not wanting to deal with your anger at her actions.

Just a point on what you have to risk hyperlost.
You have so much more at risk than your heart.
You could come home one day, and find your house completely cleaned out, and your kids missing.
If you live in a community property state, she can get more credit, and you will be responsible for it. That $6K she ran up could turn into $60K.
It's my opinion that you need to stop thinking about her so much, and start thinking about yourself and your childrens' future.
But I found out that time away put some thoughts in perspective for me. And do not blame yourself for her stepping out of the marriage you did not cause this she choose to. You and everyone else deserves so much more then that. Stay strong and keep being yourself whatever decision you make. Figure out what you want to do first before listening to her because once you figure out what you want you can go ahead and not go back at whatever you choose. Make a decision and stick to it. Now all of a sudden you've offered to step out f the picture and she's saying she loves him and putting big pressure for him to step up. Sounds like the perfect way to scare off a guy!!!
It took my husband awhile to get out of his infatuation fog when i first confronted him about the OW ... so it's not surprising that she's still attached to him. If you want to make this work, you need to be patient (which i KNOW is hard, but will be worth it in the long run.) Just because she has feelings for this guy now doesn't mean that she'll have them a month from now, or 1 year from now. Feelings are constantly changing, and while they may be real now it doesn't mean they are permanent.
Do the 180 and give her space to work through all this in her mind AND THEN start asking questions when she's ready to give you an honest answer. She's high on what she thought was love, and you have to let that drug get out of her system so that she can see things more clearly.
You can turn this around if you do it the right way and in the right time.
In the meantime, it would be helpful for you to start learning about affairs and the mechanics behind them. NOT Just Friends is a wonderful book that many of us have found to be a lifesaver.
