There's a great deal of research linking gluten with inflammation. So, even if you don't have Hashi's - and have some other inflammatory process working on your thyroid (which you do) it can only help.
Simply substitute white things with other things that are heavier, but fewer in calories. Like sweet potatoes instead of white potatoes. Like lettuce as a "wrap" instead of bread. After a while...bread will taste obnoxious.
I have read that many of us should be on a "gluten free" diet and by gosh you just don't know what's in wheat these days, anyway.
