A group focused on motivating all members to GOYA= "Get off Your A@#'s" and exercise to help maintain a spiritually fit body and mind.. All are welcome regardless of ones affiliation, however the emphasis is on motivation and education in regards to exercise and nutrition. Have fun and GOYA!
Since we have a salad bar at work, that's what I often have for lunch..Today was typical -- spinach, carrots, some chicken and a hard-boiled egg with a little mayo. The cafeteria makes good soup so sometimes I have that.
For a snack I had a banana and some soup crackers.
Dinner was a small plate of nachos , a carrot with some beet hummus and a few fresh figs. I will eat something else before bed probably. Maybe some blueberries in a little plain yoghurt or some walnuts. Or both.
I am eating okay. What has made a big difference for me is cutting way back on sugar, which eliminates most processed food. (including Progresso soup because of the added sweeteners. It used to be my "go-to" soup.) I don't shy away from meat, but I don't eat a lot of it. I don't eat store bought bread -- it has too much sugar.and tastes like crap to me now.
Guilty pleasure -- chips and guacamole. And three cups of coffee every morning.
And I try to stick to Healthy Vegan.
You can be a vegan and still eat junk.
If I go to the gym early I have a protein shake with fruit and spinach immediately after.
Then when I get home I have some Tempeh and fruit and nuts.
If I don't go to the gym first I don't have the shake.
Sometimes I do oatmeal and fruit/nuts
Snack: carrots/crackers and hummus
Lunch: Tofu stir fry with veggies and brown rice, or a veggie wrap with vegan sausage or vegan chicken.
I do pasta sometimes too. I put fresh spinach in my sauce.
Snack: Apple with Peanut butter..........or perhaps a protein shake with fruit and veggies
Dinner: A big Salad with lots of lettuce (red leaf lettuce) all kinds of veggies, and some kind of vegan "meat"
I try to stay away form sugar too....I am always checking the sugar content of stuff, and I will NOT eat "fake" lab created sugar.
I've never had Tempeh. What is it like and how do you fix it?
I just cook it in a pan with coconut oil.
And add some fruit and nuts.
You can marinate it too for more flavor.
It has a lot of protein!!
I do eat less meat these days. Like Jersey, I enjoy cheese, but in moderation.
My Gluten consumption has decreased, but as I said, I still like bread and pasta (in moderation)
Ex-J, our breadmaker died a few years back. I guess it's time to buy a new one.
OneToo- thanks for the examples. Have you ever had a Veggeie burrito bowl at Chipoltes? They have a spicy tofu that is awesome. Rice, beans, Fajitas (grilled peppers) guacamole, salsa, and lettuce. Hopefully that meets your standards, but I love it.

Jersey- I would kill to have a salad bar anywhere near me as I love salad but find my self throwing much of my produce out if I buy the stuff to make it
I know this sounds stupid but what is gluten and what foods is it in and why is it bad for you?
I like to take everything with a grain of salt (so to speak). A few years back, they said eggs were bad for us. Now (apparently), they are good for you........cholesterol and all. Because there is both good and bad cholesterol. I've cut back on my bread and pasta, but I haven't eliminated it. But there are people who insist that this is the key to health. As for me, I think the key is balance.
I do buy a lot of produce that gets eaten -- mainly fresh fruit. It's corn on the cob time, so I am eating a lot of that right now too. I don't bother cooking it, I just shuck it and eat it raw. Yum.
She suffered with this for several years until a doctor finally figured out what was going on and put her on basically the Atkins diet and the results were immediate.
