Gastritis Support Group
Gastritis is a medical term for inflammation of the lining of the stomach. It means that white blood cells move into the wall of the stomach as a response to some type of injury. Gastritis has many underlying causes, from infection with the bacterium H. pylori, bile reflux, or excessive consumption of alcohol or certain foods or drugs like aspirin.
I just wanted to update on my recovery after Easter.
It went pretty darn well! I packed my own lunch because everything at my mamaw's Easter dinner was so fattening. (Even the corn was cooked with a full stick of butter!) Everyone was nice about me eating specially, and some were jealous that only I had chicken drumsticks, I was jealous that everyone else was having country home cooked chicken and dumplings XD Unfortunately, one chicken drumstick was undercooked so I had to toss it out :(
People LOVED my grape apple pie that I made, and the found it quite humorous and inspirational that I was able to watch what I eat but make something so fattening and sweet for everyone else! I even tried a piece of the pie, a tiny piece. It was good! but I thought it missed something since all the tart in the apples were gone and replaced with sweetness (I believe it was the over 3/4 cup sugar the recipe called for).
My relatives say I should take a cooking class! I say I'd love to if I had the money and if it looked good on my job resume.
Though I did end it with a close call. I did get an Easter basket, with little chocolates and a lot of candies that I could eat in moderation such as jelly beans and lollipops. Unfortunately, I ate one creme egg too many and got a tummy ache for about ten minutes. That was close, TOO close! I better watch what I eat, I still got candies left ^^;
(I had another close call when I accidentally swallowed a little bit of gum, luckily nothing happened but I assumed the worst from my digestion since you shouldn't swallow gum at all).
I hope you all had a good, comfortable and pain free Easter too. And I hope your stomachs were well enough to sneak in some candy :D

Nah, cooking is more like a hobby. It started a few Thanksgivings ago when I wanted to try cooking a pumpkin pie. Now I've been cooking pies for holidays ever since! Though over the summer I'm thinking of trying recipes for a few salads, some cole slaw and this flank steak that's SO decadent despite having nothing on it! Oh, I sure hope I can have flank steak by the time I try that recipe :D
