Oh and it was rainbow colored. lol. He food colored the batter in six rainbow colors and pour each one into the pan on top of the other.
as a baker, not being able to do desserts like i did before was sad for me.
but i have learned some tricks along the way.
First start with recipes you know and simply see if you can exchange the sugar for splenda or Ideal sweetener.
Second, all sugar subs are not the same. Splenda is great for drinks, and other cooking, But i find it lacking for true baking. that is when i found Ideal. google it and see if you can get it near you or order online. their brown suger is amazing.
third - even if it's sugar free it doesn't mean you can eat alot. i make a sugar free money bread. but with the combo of butter, biscuits and sugar free, if i have more than a few bites i will get sick.
finally, i was lovingly told once that it was too soon for me to start baking. i was 6mos out and wanted to make sf girl scout thin mints. the person was right. i had not formed the new habits i needed to be able to bake and just take a bite or two.

1 box (3.4 oz.) SF FF vanilla instant pudding and pie filling mix
1/4 teaspoon pumpkin pie spice or ground cinnamon
2/3 cup (5 fl.-oz. can) NESTL CARNATION Evaporated Fat Free Milk
1 cup LIBBY'S 100% Pure Pumpkin
1 1/2 cups thawed sugar-free frozen whipped topping
COMBINE pudding mix and pie spice in medium bowl. With whisk, add evaporated milk; mix until well blended. Add pumpkin; mix well. Gently fold whipped topping into pudding mixture. Spoon into serving dishes. Top with additional whipped topping and pie spice, if desired. Serve immediately or cover and refrigerate.
*I put this in disposable plastic shot glasses that I bought at Target and mini plastic spoons from the dollar store and
brought them to a cook out. They were a hit.
