It doesn't turn to sugar as fast like the white potato.(Not saying you can't have white potatoes). I also use the microwave to cook the sweet potatoes to get them done quickly.And if you haven't tried them baked on a grill,woo it is so good!
For regular potatoes, what I did in the early stages to up the protein was to use soup as the base of my potatoes. That way it gave it lots of flavor and some protein.I used a food processor to grind the soup then heated it up and then added mashed potatoes to it. Best tasting potatoes was bought at Sams club.!

@fatmans - I am aware of the differences in carbs, but what I find so confusing is that my nut is limiting my carb intake to 20g per meal, yet a lot of things that are approved for me to eat right now (like mashed up black beans or refried beans) have over 20g of carbs per serving. Yet, I am told those are ok because they are complex carbs vs. refined carbs. I totally get that, but I think that my nut has not done a good job really explaining this. If I didn't have that knowledge already, I think it would just confuse the heck out of me (more so than I am now).
