I live on those Starkist SeaSations fish filets, if you like fish. Gorton's Tilapia filets are also very good, IMO.
There a lot of single serving items out there that are good for you, you just have to shop around and read the labels.

Chicken Salad (use 1/2 Greek Yogurt 1/2 Mayo to moisten)
Make a few casseroles, soups, stews and freeze into portions

I have learned so much about meal preparation and cooking....yes, cooking.
For me, and this is my lesson - i need to be responsible for preparing my food and making good food choices.
