For a crunchy snack I grab a small handful of soy nuts. There's 11 g of protein in 1/4 cup.

They have protein bars, soup mixes, puddings etc. The most you'll need is a source for hot water and a cup. My favorites are the oatmeal, bars and soups. All have 15 grams protein and very little carbs or fat.
You can make or buy big salads topped with lean meat or tuna in water and have that for your main meal. I use shredded coleslaw mix w/o the dressing instead of lettuce. Stretch your favorite dressing with balsamic vinegar. I mix the dressing with chopped red bell pepper, cucumber and scallions and let it marinate. Make a batch every few days, then dump some over the cabbage and top with tuna, deli meat, grilled chicken, whatever is low fat Sometimes I add garbanzos but those up the carbs a bit.
Once a week I cut up veggies, put them in ziplocs, squeeze the air out and snack on them with dressing or plain.
You can eat very well with just a little planning.
