"I've tried not eating...." That can mess up your metabolism. Not eating can make your body think you're starving it, and it will hold onto every single calorie it can.
Instead, try making sure you're getting your proteins, veggies and liquids in. Besides keeping you full, proteins and veggies will jump start your metabolism, keeping it stoked for your exercise to start making a difference again.

make sure your getting enough to eat. sounds dub but if i don't eat enough i will start to gain. my body goes into starvation mode..i have a thyroid issue too its all so crazy i find. I have one more thing i came across........I take medications and my psychiatrist had me on one this year it took me 4 months and 40lbs to convince her it caused weight gain in me and i was right off 8 weeks down 11lbs. ..........so if you take meds even if they are weight neutral keep a close eye of when you start them and stuff. hang in you are doing great.
Losing weight and maintenance are pretty much the same thing. Back to the basics... 70+ grams of protein a day. Drink lots of water. Other than protein shakes don't drink your calories. 3 meals a day with no snacking (what I did) or 3 meals with 2 planned, 100 calorie snacks. No drinking with meals (or 30 minutes before/after). Eat mindfully. Avoid white foods (rice, pasta, sugar, flour, bread, etc). Move as much as you can each day. Get at least 8 hour of sleep a day.
Artificial sweeteners can mess up your metabolism and make you crave carbs. Personally, I have to avoid gluten - a couple years ago, I was eating 5 Ritz crackers with my soup every day and was hanging out at the top of my weight range. I dropped the 5 crackers and lost 5 lbs within 2 weeks. The crackers were the only thing I changed.
A few thoughts based on your post: You state you have tried not eating and exercise several hours a day. Sweetie, that sounds like you are heading for an eating disorder. I'm also concerned your doctor would prescribe a diet pill for someone who has had GBS. If you are over-eating at this point, it is because you are emotionally eating, not because you are genuinely hungry. Have you read any of Geneen Roth's books? I read Breaking Free from Emotional Eating, and it was a life-changer for me. I also encourage you to find some self-nurturing activities (other than exercise). Reading, playing an instrument, gardening - something you do because it brings you joy, not because you're supposed to do it.

Get enough sleep (really, really important)
Try to total relax your mind and body for at least 10 minutes (20 or 30 is better) once a day.
Check your emotions--stress can contribute to weight gain.
Work with your team.
I'm confident that you can get control of this. Just trust yourself. You are in control.
