If anyone remembers there was quite a to do about my birthday cake this year.
I resolved to make my own cake but I wanted a full size one I could share with my family.
I made my own chocolate caramel protein ice cream, SF/FF pudding and used 1/150 cal pkg of Previa chocolate heart cookies on top. I could not find a substitute for cookie crust so I used a pkg of Oreo cookie crust mix but did save by using low cal margerine.
I used a spring form pan and put a layer of Oreo cookie, layered chocolate caramel protein ice cream, light layer Oreo again, layer of SF/FF chocolate pudding with the hearts on top and froze this. I have to say it came out pretty good except for 2 things, my picky husband can taste the protein and I could find no acceptablely affordable solotion to the cookie crust problem. I will try to rework this again but in the meantime I intend to finally have my cake and eat it too.
Does anyone have any suggestions for the crust. Remember, this is full size cake so you need quite a bit so affordability is a consideration.

For my birthday my sister made me sugar free cupcakes with sugar free frosting.
I will try this I just wish there was something with less calories.
