Ok, I know I haven't been around lately, but I have popped in to read. It's about that time of year and I have been super busy getting ready to go back to school. Today is pretty much my first day back to work. ihave to go to new teacher orientation all week even though I taught in this school district before. (The hubs is military, so we were out of the area for 3 yrs.)
So, I am having a shake for breakfast and I have packed some cottage cheese and Greek yogurt. We will be given a lunch break, so if I have time, I will come home and warm up leftovers (made the chicken enchilada casserole from Eggface...DELISH!). If I don't have time, there is a Chick-fil-A right down from where orientation is and I can get the grilled nugget kids meal with a fruit cup (to save for later). So, all in all I feel like I'm prepared for the day ahead.

Good luck! Sounds like you are well prepared. Please stay away from the fruit cup if it isn't fresh because of the sugar content in packaged juices. Greeting in the habit of taking water, snacks, and a healthy lunch with you will help to keep you on track and help you to reach your goal. You will have this teacher orientation in the bag!

Thanks, Lcat. They ended up serving us lunch from a local deli. I grabbed a turkey on whole wheat (there were the most of those) and I just ate some of the turkey. Then I had my yogurt as a snack. I have away the cookie and chips that came in the deli's box lunch. Overall, I feel like I had a smart eating day.

Sounds like you've got it figured out. I love egg faces recipes Ill have to try the enchilada sounds good.
