I don't know what the labour laws are in your state, but the job conditions that you describe are not in line with any guidelines that I can think of. Think about what this job could do to your health, and where would you be -healthwise- after doing this for a couple of months?
People can have arthritis at any age--- there's even juvenile arthritis, and RA doesn't care about age, it hits when it hits--- so if they don't believe, just rattle off some handy facts from Mayo Clinic website or something.... I had OA in my left knee by 22 b/c of injury issues to it.
And, frankly, being me, I'd report their a**es to the NLRB or something... But I'm that way. In the meantime, tell them honestly that you had no idea it was gonna be such long hours without a chance to rest, ask if you can even split your shifts so you get a couple hours in the middle of the day to go home and rest a bit, and maybe start looking for another job.
So sorry you're hitting this obstacle. Wish I had better advice or a cure.
I had a similar situation - not with hours, but with frequency of pay - at the place I now work. After I was hired, I was advised I'd be paid once a month for a full-time office position. This is against the wage and hour laws in NJ which stipulate that the least amount of time a full-time employee can be paid is twice a month. I broached the subject saying this is going to be an uncomfortable conversation for both of us, but I though you might like to know . . . . (etc.). The one partner said they pay their other people once a month However, I pointed out that they are contractors, and not employees. I also told them I really liked the job, and was excited to be here, but it would prove a financial hardship for me to be paid once a month. I didn't want to be "that" employee and make issues when I just started, but I thought they might want to know.
They understood, and started paying me twice a month. And they like me and my work ethic.
Long and drawn out, and you're saying, "But what does this have to do with my situation?" Do your research, and calmly and deferentially approach them laying out only the facts. No threats to report them. Just like, "I don't know if you are aware, but in speaking to a friend of my who is in the Human Resource business, . . . . "
Although these are things that should be brought up during the interview and offer process, smaller companies sometimes aren't aware. I was astounded that I'd be paid only once a month and never even thought to ask, because my former jobs all paid twice a month!
So, relax and understand that these issues are not insurmountable. There are ways to navigate through them. Last month I had a nasty flare, and let the boss know I was having "back issues" that were aggravating the nerves and muscles in my neck, shoulders and back. They've been accommodating, got me a really comfortable ergonomic chair, a track ball mouse (I use my left hand rather than my right because of pain), and won't let me lift or carry anything.
Employers may surprise you with unexpected kindness.

The best way to protect yourself AND get what you need is to ask for accommodation for a disability. Be prepared to explain what it is that you need and why. Also be aware that they may not respond well but you are within your rights to ask.
There is nothing in federal law that requires breaks but if your state law does, then you have that right as well.

I don't know if that would work for you or not, but it's the first thing that came to my mind. If, on the other thing, you want to keep this job or there aren't others available, that would obviously not be the way to go... I hope you're able to get this worked out.
