Secondly, surely you dont mean always adding 500kcals more everyday? Cause that number would sky rocket soon, you mean 500 extra cals and then stick with the new total for a while?
As far as reverting back. There will be initial weight gain. It wont consistently go up, so long as you're not in a calorie surplus, which i'm sure you wont be, but initially, adding 500 extra calories, there will be some water weight. It takes time for your body to adjust. I'd say stick with the new total for 3 weeks (not a long time in a scale of things) and i would expect to see your fat distribution start to work better, and the water weight to be gone, and you would look much better. Just have to get over the inital jump.
Would you be willing to give that a try?
Have you tried online support groups like OA or EDA? I know they have online meetings and phone meetings. Sometimes they help.
I relate to struggling while those around are moving on. I see that happening in my own surroundings - I'm very happy for those, but at the same time there is a twinge of what am I not getting?
If you want to talk, I'm here, struggling, but still here, trying and willing to listen.
