By just checking off the type of food you've eaten..all you have to do is think.."Did I have a grain?" "Did I have some fruit?" rather that putting down exactly what you have and having to think about it for too long. Plus it keeps you in a healthy frame of mind, because you can see if you're lacking in fruits and veggies, which are generally "safe" foods.
When you start to feel guilty, try and tell yourself that you are giving yourself permission to eat the things you are writing down. That it is allowed, and that you were free to make that choice.
Whether or not you continue the food diary, I do think that you should tell the nurse that requiring you to do the food diary is make you more conscious of what you are eating - which makes you fearful and want to eat less.
