(makes 2 dozen)
Ingredients:
4 ripe bananas (medium size)
1 pound whole strawberries
2 1/2 cups Quaker 1-minute oats
3/4 cup milled flax seed
1/4 cup healthy oil (1 1/2 cups of ground flax can be
used instead of this oil. Then 1 muffin meets the FDA minimum req.

2 cups no-fat milk
2 lg eggs (or just the whites if you like)
2 1/2 cups whole Wheat flour
1/3 cup brown sugar
1/4 cup sugar (or splenda, even better)
1 cup chopped walnuts
4 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon salt (for presevation in the freezer)
Directions:
Soak the oats in the milk in a small bowl to soften them.
In big bowl mash the strawberries and bananas with a masher.
Add the rest of the ingredients except oil and mix well.
Mix in the oats from the other bowl.
Mix in oil.
Bake at 475 degrees in a preheated oven for 15 minutes.
I spray the miffin pans real good with Crisco's butter flavored canola
oil. The muffins get nice and brown, has a buttery taste and the pans
clean up easy.
45 seconds in the microwave from the freezer gets you a very healthy,
low calorie for all of the nutrients treat. High in fiber, protein and
omega-3 and many other nutrients. Does a body good.
