Like you I love my veggies. One thing I find that helps to keep the flavours varied is to use different herbs and herb blends as well as the olive oil (and garlic for me mmmm yummy)
Just as easy as the fry pan (although more time consuming) is to toss you veg in that same tbsp of olive oil and then roast your veggies in the oven so that the sugars within them caramelize. You don't need to watch or even stir. Just throw them in a glass dish at about 375 and walk away until they're ready. Time depends on variety and piece size.
A few months back I purchased a Ninja - simple basic model. Smoothies around the 200 calorie mark are a favorite of mine...ice, yogurt fresh or frozen fruit...vegetables as well.
