I will give you one bit of advice here and I hope that you will think about it and follow it. I have done it and am still working on it.
As Adrianne said once a diabetic always a diabetic and anyone who sells you a book, scheme, diet regime promising otherwise is just fleecing you of your money.
OK my advice.......... Eat a normal low carb - low GI diet - small portions - and test, test, test to find what will and won't raise your levels.
You need a balanced diet and the advice I was given to eat double the amount of protein as you are carbs. Others say more carbs than protein.
I prefer to do 50/50 and that seems to work for me.
But you need to work out what works for YOU as we are all different and our bodies react differently to things.
The only way to know what will work for you is trial and error.
Test/eat, test/eat, test/eat, test.
This is not a sprint - it is a marathon and you can take time to sort things out.
I know my body and I would not work on a vegan diet, I would think very carefully about going in that direction as it is pretty extreme.
