Secondly, you have to start viewing food a different way, for example a normal coke and noodles is going to hit your blood glucose hard, so that's something you have to understand and move away from in your eating habits.
Thirdly, you need to start learning - so google around and find the quality sites, like this one, but don't google or read too much to start. I overdosed on Google and it really stressed me unnecessarily. You don't need to know too much. In fact I write about my experiences now at www.diabetorati.com and you might find things there of some interest.
The main points to start on are to understand more about what you are eating, buy a meter and start measuring the outcomes after your meals and make notes, reduce the meal sizes by 20%, exercise 20% more, and get to understand the relationship between the food you eat, the exercise you do, and your body and blood glucose levels. After you get that basic understanding you can start to build a program which will bring you under control, and reduce your stress.

As a caregiver, itrained the recipient to respect my time (w/obeing mean). i see lots of elders who seem to be pissed @ the world!! prolly cause they cant do much. Find someone to help out 1-2 x per week . (call hospice for info) you should not feel bad for attending to ur wants/needs GL

The other day I was so hungry I ate about half of a cup of mac and cheese, I thought the cheese all over the mac would prevent me from spiking. No such luck. I spiked big time.
"Normal" people's sugar levels do go up and down. That is why drinking an energy drink loaded with sugar and caffine will make you have a crash later. The pancreas makes extra insullin to cover the spike in sugar, but it causes you to be very tired, thus the crach
effect.
The fact that your sugar level went back down to the 120's tells me that your pancreas is still making insullin and is able to bring your sugar back to the normal range. But, you will not get an accurate reading for about two hours after you eat. If after two hours and a walk you were not back to normal levels you would need something to help your body get back to where it is supposed to be.
Here are some of the symtoms you need to look for:
Are you thirsty a lot of the time?
Do you get really sleepy after a big carb heavy meal- like Spaghetti?
Do you have to get up repeatedly at night to urinate?
Is your fasting Blood Sugar level consistantly over 120?
One thing you might want to do is keep track of what you eat with a log for at least a week and write down what your bs level is fasting, before each meal, and two hours after each meal. It will require that you stick your finger a lot for a little while, but it will give you a clear picture of how your body is reacting to the food that you eat. Then you can take your log/journal with you to your doctor. You can go over these results together and he can help you if there is a problem. Sometimes they need to see things in print to know what is going on with you. Help him to help you!
A solution may be as simple as following your diet closely and getting more exercise to stay in a normal range, or you could need a little medicine to help you stay on track. The most important thing is to do what you can now to help keep you from having a really hard time down the road.
The diabetic diet is a good, balanced, well rounded plan that is good for everyone. You don't have to panic, or go "extreme". Just make good healthy choices for your meals and snacks. You will feel better and find that you have less stress because you are better able to handle it!

You seem to making good progress, if you like (or can used to) avocado then you might like to try a half with your breakfast each morning. I'm sure mine helps my blood results. I have it with apple cider vinegar and also freshly ground pepper, and sometimes sprinkle tumeric on top but that's getting a bit geeky so without that is fine.
