I was surprised to learn that skim milk has more carbs than whole.
I also use almond or soy milk on cereal and find it surprisingly good. You can also add some brown sugar Splenda and maybe a sprinkle of raisins, with no milk. That gives it a lot of flavor. I used to eat it that way before diabetes.
