Just me, but I try to eat only no-carb snacks between meals: cheese sticks, jerky, pork rinds, sugar-free jello, etc. At bedtime, I eat a balanced protein/carb snack such as some nuts or peanut butter & a low-carb cracker of some kind.
I eat a much lower carb diet than the American Diabetes Association recommends, so you might want to take this with a grain of salt. I take insulin and a pill, but I still need to eat very low-carb too keep my numbers in control.
Everyone is different, and my advice is to definitely count carbs--but also to test often so that you know which foods adversely affect YOUR blood sugar.
