For ideas on what to make to eat, try dlife.com, they have a lot of recipes and they are pretty good for the mostpart. Learn to read the food labels and count your carbs because carbs are sugars. Per meal you are allowed 30-35 carbs and for your two daily snacks, you are allowed 15-20.
For your blood glucose measurements, you should take one in the morning when you wake up, and then two hours after eating. I do mine before eating but that is what my doctor asked for. Keep track of your measurements because that will give you an idea of how your body reacts to your lifestyle.
