I just returned from my therapist, as noted in my journal and among the coping mechanisms I used, and she noted, for surviving a horrible weekend alone and, frankly, in a suicidal state at times was this very website. This community and structure is a saving grace of immeasurable value and I commend it to all who stop by.

I'm trying to exercise daily. I was doing fairly well until I sprained my ankle 2 weeks ago but now I'm getting back on the horse. Today I walked over a mile with my arm weights that are about 22lbs total. I was out of shape and it was hard on my arms. I also did my 30 situps. I'm also going to drink a lot of water and try to eat healthy. I do tend to have a sweet tooth but I'm cutting...

I use the Stevia Packets some of the time; however, for baking I use the bulk (8 oz. stevia powder) instead of having to open so many packets.
Baked goods do not rise quite as much as when made with sugar, and do not brown quite as well. You need to test for "springiness" and/or use toothpick to test for doneness.
The conversion rate is:
1 tsp extract = 1 cup sugar
1/4 tsp extract = 1 Tbsp sugar

1 Tbsp Stevia = 4 Tbsp Sugar
1/4 tsp Stevia = 1 tsp sugar
1/4 cup Stevia = 1 cup sugar
In other words, 1/4 as much Stevia as sugar called for in recipe.
I feel sure you could call the makers of Truvia and find out if it is the same. You might even ask if they have any recipes available.
I think it's okay to bake and make sweets once in a while when my blood sugar level is stabilized, but I want my tastebuds to get away from wanting everything to taste sweet. Boy do I have a sweet tooth.
I like to use unsweetened applesauce, vanilla, cinnamon and other spices to make desserts have a good flavor. Fruit desserts are great.
But I can`t take it much anyway because it is acidic to my taste. My gut is supersensitive to acids and I have pain if I eat much stevia.
