I thought it might be fun and interesting to share some ideas on cooking for one.
I live alone and have a small appetite, I enjoy cooking but hate to wash dishes. So I make casseroles as if I were cooking for 6 or 8 people, then put them in individual freezer containers until I am ready to eat. Things like macaroni and cheese, c)hicken and rice, homemade soup to name just a few.
Just pop the in the microwave for 3-4 minutes and they taste as good as fresh made.
I even do biscuits and gravy (my favorite breakfast) and only have to wash the gravy pot once a week!

check out that smoke ring. It tasted really good. I smothered it with Maulls BBQ sauce which is Local to St. Louis and one of the best I ever had.....


I even premake breakfast foods. Ziploc used to sell a product called Perfect Portions. I stocked up on them. On a weekend I'll make a huge batch of waffle mix or pancake mix and spend time making them. I freeze them into portions of 3 pancakes. Then my kids can have a hot breakfast if they want. The pancakes take a minute in the microwave to be ready.
I haven't found much that I can't freeze. I know I'm out of mac and cheese in the freezer so that is on my shopping list. My kids don't like sandwiches unless we are on vacation traveling so it is nice to have foods ready for them to eat.
Have any of you found a good freezable container that holds about 1 cup, and is re-usable? So far, when I make stock (chicken, turkey, beef, etc) I use zip lock freezer baggies, but that gets a bit expensive, and they are not the easiest to use when I've got a half gallon of stock to freeze.
I EAT STRAIGHT OUT OF A CAN OR COOK IN THE MICROWAVE OR HAVE HUBBY GET ME SOMETHING FROM A RESTAURANT WHEN HE IS HOME....................................

I GOT A MENU THRU THE MAIL 4 IT AND WILL SEND MY HUBBY 2 THE RESAURANT NEXT TIME HE IS HOME.

I would like to make sausage gravy for biscuits but I have never done that....I would buy can of biscuits for that....for breakfast I will sometimes get bacon and eggs....I usually do over easy rather than scrambled because I hardly ever keep milk in house....making an omelet is out because of no milk and the other ingredients aren't here usually either....but I do sometimes just have a sandwich for breakfast....or bagel....
lunch is usually some kind of sandwich....not much else...unless leftovers from eating out or cooking....then I might indulge in those...
I do a lot of pizza and summer BBQ of pork steaks bratwurst and chicken and a few steaks....
as for casseroles I usually do not make anything like that....maybe chicken in the oven with cream of soup and some stuffing? I will make my own chili....I am ready to make some of that soon...just bought some ground beef last night just for that... I will use my crock pot....I am not sure if I have chili powder right now though...everything else is in can in cabinets....except onion...I need one of those...I hate green pepper so do not use those at all...
My favorite breakfast is biscuits and gravy. I make my own from scratch, but if you wanted to use canned biscuits you can buy a mix in the grocery section where they sell other seasonings for sausage gravy. Just add water and follow the directions on the package.

I do my own chili too and this week I cooked a big pot of pinto beans with ground beef and taco seasoning. (1 pound of beans, 1 pound of ground beef and 1 envelope of taco seasoning in the crock pot with 8 cups of water for 5 hours) It made 12 half-pint jars for the freezer.
