I soak 3/4 of a quart of beans in water for 24 hours.
Mix 2 tablespoons of healthy oil on them, spread them on 2 cookie sheets.
roast at 475 for about 30 minutes taking them out about 3 times to stir them up.
Gotta get them just right. If they aren't brown enough they are soft, to brown and they are burned.
After browning lightly salt if you like. I flavor mine with onion powder, garlic powder and a few drops of liquid smoke.
This will make about 1 quart and they are a great healthy snack.
Your not alone in the Allergy to soy Sally, my sisters son Gareth cant tolerate it either.
Tom that's really great you can get them fresh and bake them, salt them and eat them fresh from the farm is fantastic!

Consumers just gotta make sure the soy is not from GM (genetically modified) beans
I can get fresh frozen green soy beans, they are delicious.
I also eat the dried soy bean as a snack Tom although don't have the luxury of them being farmed locally and I'm sure yours are much tastier, freshly roasted.
