It is good to know things are going well with you. Besides eating red meat, try egg whites, they are rich in protein and have low cholesterol and see if your husband can do any kind of exercise, walking, anything at all, really.
Good luck and best wishes!
Put him on B-Complex, COQ-10, Zinc and B12 supplements to aid his digestion. As WQ says, egg whites are excellent and can be bought in powdered form. (personally I prefer steak, but.......)

I can't eat any red meat. Makes me ill and also induces the enceph.
He needs protein though. If he can eat it that's wonderful.
Peanut butter is high in protein also. If I remember right, 1 tbls equal
10 grams of protein. It, chicken and eggs are my staples.
Walking is good. Have to keep moving or muscle mass does
go out the window very quickly.
Keep us updated on how it's going!
