If this is the case with you...do you bake gluten free breads and other things? I can give you a baking mix combination that I came up with that you could use as the substitute for flour.

Gluten Free Baking Mix:
2 cups rice or millet flour
2/3 cup potato starch
1/3 cup tapioca flour/starch
2 tsp. xanthan or guar gum
Mix it well and store in a place that isn't too hot.
I find that white rice flour is the closest to white flour for a light texture. Keep experimenting!
